Avocado Lunches

I love the avocado´s smooth, rich texture and subtle taste. It makes a great, quick, light lunch when combined with other simple ingredients.
Chop a few onions, slice a tomato, fill the avocado with canned (sorry about that) salsa and serve with home cooked beans sprinkles with some queso seco. ¡Deliciosa!
Or dig it out of the shell with a spoon and serve it with beans, fresh vegetables and a tortilla crisped on the gas burner. Squeeze on a bit of lime and salt. ¡Sabrosa!
Or fill with chopped tomatoes and capers and put the ever so simple quesadilla beside it.
