Mango

 

The Mango tree is a major revenue source for Nayarit. Mangoes are the fruit most eaten in the whole world. Mexico ranks third in the world as a producer behind China and India. The state of Nayarit is the largest producer in Mexico despite it’s small size. The price to the producer in 2011 was around 2 pesos per kilo depending on type and quality.

Mango trees start to bloom in December. It always amazes me how few of the millions of blossoms develop into fruit.

By late January the fruit appears as the blossoms start to wither.

By mid March the fruit is starting to show promise of the succulent harvest to come in May and June.

By May and into June the trees hang heavy with fruit.

The fruit is used at various points along the maturation process. Green mangoes are served with lime juice and chilli spice like so many fruits and vegetables.
